I just posted a suggestion for the Salvador and Primitivo on your other post, but I'll add a few more comments here. I don't think the Norte qualifies as "out in the wild" either, though the coastal scenery is really incredible. The route takes you through many touristy coastal towns, though the part in Galicia when you turn off the coast at Ribadeo is definitely less touristy and quite rural.

I haven't walked the Camino Aragones, but that might be more what you're looking for.

And I hear that there's a beautiful route through the Basque country, from Bayonne in France to Trinidad del Arre in Spain where it hooks up with the Camino Frances. The name is the Camino Baztanes. I got some information from more experienced Camino people last year, you can see what they said here: el-camino-frances/topic5117.html?hilit=baztan#p28926

The Via Tolosana and Camino Aragones are fairly green, but still have many stretches of road. From a map view the GR-10 from west of Perpignan to Hendaye on the Atlantic looks a lot like Sierra Nevada mountain hiking with refuges. You could start at Borce by going through the pass at Candachu.
