There are trains almost every hour in daytime from Santiago to Pontevedra. Takes about half an hour. You can take a bus from the airport to the railway station. Fast, cheap and frequent during the day.
You can check Rome2Rio for transportation options, including the train
Hi Chris
If you want a Compostela you will need to start from Tui
@woody66 is right. Pontevedra is only 63.6 km from Santiago (per Gronze)
You will need to start at O Porriño earlier to qualify for the Compostela.
