Hello; son is a long legged and 14 years old. He is a jogger and going ahead of mom each day who is walking. Can son check-in to allergies for both himself and mom before she arrives.

He will find that on a case by case basis it is different. Most albergues don’t open their doors until 1 pm and usually ask for the identity papers and Camino passport to allocate their beds
 
Yes, case by case; but in 2016 I often checked in (and paid) for both myself and daughter as I was almost always ahead. And most of the time we had reservations since it was so busy.
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
Most albergues work on a first come first served basis so they like you to be present - this prevents "bed blockers" who claim their friends are "just behind them" when they're really still 5km down the road.
 
At 14 your son is a minor, and I'm assuming they wouldn't allow him stay alone at an albergue without a guardian, so (one would hope) it would be in everyone's best interest to ensure his mom could stay with him.

Maybe write a little spiel in Spanish that he can show to the hospitaleros to explain the situation? Just something simple like, "I am 14 years old, and my mom will be arriving soon"? No guarantee it will work, but it the Spanish take child protection very seriously, and they wouldn't like the idea of your son being alone. Anyway, worth a shot.
 
We had no problem at any private Albergue, whoever arrived first paid for the beds which showed we were serious and protected them from a no show. They only asked for one persons ID as well. This was in 2017.

Tried that on my first Camino. It did not work. Son had to check in, drop his bag and come back to carry my bag for me as I was completely finished. It was my first day on my first camino and boy was it tough. Got better though
 
Looking at things as a Hospitalero ...... If the Boy did have your Credential along with his and both your passports info , I probably would bend the rules and he would get the top bunk and reserve the bottom bunk for you.
We have to accept that now days a 14 year old is a young adult?
However , if you are concerned with a possible 'Bed Race' during a busy period , I think you should look at other options - as , that he accompanies you and you limit your walking distance to something more manageable.
To be be honest , in my view is he should walk with you.
