I use a Ortovox soft shell, and I always was fine with it, even at low temperatures. Add layers and you’ll be fine.
 
Best wishes on your 1st camino. I'd suggest gloves like liner gloves and a neck cowl. Easy to put on and take off. Don't duplicate scarves and cowls to avoid unnecessary weight.

Fleece. I also brought a Marmot rain jacket which was surprisingly very warm.

I've taken lightweight fleece, and lightweight puffer every time, and have worn them all. Most mornings I wear everything, and slowly peel off as/if the day warms up.
