May - June 2015 (portion of Via de la Plata, then Astorga to Santiago)
I would like to send a note to the nun who sang the liturgy at the Cathedral. Does anyone know her name and/or how to contact her?

Write to Madre Victoria, La Sacristía, Catedral de Santiago de Compostela, España.

Best to write in Spanish as she does not speak English.

Yes, Victoria is her name. She is the Superior of the House in Santiago and so she is called Madre Victoria. Hermana would do fine too. The Cathedral mail is delivered to the Sacristy and so she is bound to get your letter.
