You can use a cellphone to call ;). You could also ask the (very busy) hospitalero/a if staying in an albergue, the concierge if in a hotel or reception if in a pension / hostal. You could book online via a multitude of sites, ibncluding localised ones which a quick google search will show.

Are you asking about backpack transport or to get a ride for yourself? As far as I know, there is not a people transport service between towns that you can simply tap into. In some cases there are public buses, in many cases there are taxis, and in cases where you are incapacitated, you might have to wait until a ride is arranged.

Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
If you need transportation for yourself, most albergues did hang out the next taxi and/or busservice phonenumbers or websites at their counters. If possible, the hospitalero/a may call for you as in rural spain it is likely not common that you can talk to a business in english.

I did need transportation for medical reason from O'Cebreiro to Triacastela and used the website provided by the hospitaleros at the albergue municipal to book a ride.
