We are leaving from Portland on September 25th wanting to go to Porto, hike to Santiago and then fly back to states. suggestions for where to fly in and out of from Portland Oregon

Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
However, round trip to Lisbon and a train to Porto might make more sense. it is relatively easier to return to Lisbon after Santiago than to Porto.

Here is the Portuguese train system: https://www.cp.pt/passageiros/en

Here is the Spanish train system: http://www.renfe.com/

Here is the TAP website: https://www.flytap.com/en-us/

Here is the Iberia website: https://www.iberia.com/us/

Lastly, hereis the ALSA (spanish long distance buses): https://www.alsa.es/

In the past, I have taken a train from Santiago to A Coruna, then a bus or taxi to the A Coruna airport. From there, TAP flies to Lisbon.

Hope this helps.
