A BIG stab in the dark for the first one..the cathedral in SDC?...otherwise I give up!
 
OK - the last two are too obscure!

The first one (which at the moment is my favourite Santiago Peregrino) is on top of the Church in Chinchilla.

The second is in San Clemente.

As Omar said, the third is in Santa Marta de Tera.

Chinchilla?...I thought they used to make fur coats out of them
