Would anyone know of a bike shop in SdC who offers a bike packing service to assist in me flying back home with my bike?
I've searched in the forum but it appears some of the suggestions point to shops that unfortunately no longer exist.
Any suggestions would be most grateful.

The Spanish postal sevice Correos can help you do this. Tap the link in blue to read more in English of this service. They package bikes for mailing. See the section Send Bicycle on this link.

Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
Yes, maybe Correos... the place in Rúa de San Pedro (Velocipedia I think it was called) I think closed (the owner retired I think).
it was Velocipedia I had heard was a good place to try. shame it's closed.

Correos in SdC sent my bike back a few years ago. I asked again late last year and, regrettably they are no longer able to do it (to the UK) but they do sell the boxes.

If you are flying it back then why not use the wrapping service at the airport. You'll need to take it apart but as long as nothing is protruding, then airlines will usually accept it.

Or if you can get to the Decathlon store in SdC, they sell a canvas bike bag for about €50 which will take a standard bike and which airlines accept.

If you intend to use Correos then make sure you have something in the hubs that will stop their "handlers" squishing them by putting something heavy on top. Yep, they did it to my bike.
