What you suggest for end april- may? I used to walk jungle with smallest bagpack. But this is Europe, lot of things on the route will be expensive to buy, if you forget it?
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
I walked the Camino Frances (2015) and the Caminho Portuguese (2017) both in May and used a 36 liter Osprey Kyte backpack. I had plenty of room for everything I needed. In fact, my plan for a backpack for walking El Camino Del Norte in August is a 30 liter Tempest.

Also, if you are in need of suggestions for packing, there are innumerable lists when you search this forum for "packing lists." Using my own list that I prepared from researching others lists, I rarely needed to buy anything but food and water, and I found it fairly inexpensive.

Spain is not very expensive compared to other countries in Europe. (Switzerland and Dennmark-- Yikes!) I packed a 35L pack and was fine. I packed a down sleeping bag too (1/3 of my pack).

Purchases are not as expensive as you might think. They are comparable to what we pay here at home. Except for the exchange rate if you need one. I use a 38 liter kit.
